SWEET POTATO GEMS | |
2 medium size sweet potatoes 2 oz. lite cream cheese 2 tbsp. butter, melted 2 tbsp. brown sugar 2 tbsp. lite dairy sour cream 1/8 tsp. salt Wash potatoes and dry. Oil and prick the skin with a fork. Bake in the microwave for about 12 minutes, 6 minutes on each side or until done. When potatoes have cooled enough cut a small piece out of the top. Scoop pulp out and put into a medium bowl. Leave skin of potato intact Melt or soften the cream cheese and butter. Add the other ingredients and mix into the pulp (I use a fork). Put the pulp back into the potato shells. Sprinkle with brown sugar and sprinkle with cinnamon. Note: Can be heated in the oven or in the microwave. Submitted by: Dianne Joyner |
