APPLE CHEESE GEMS 
2 cups all purpose flour
2/3 cups granulated sugar
1-1/2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp. salt
1 tsp. allspice
2 eggs
1/2 cup (1 stick) melted butter
3/4 cups shredded cheese
1 tsp. vanilla Extract
3/4 cups chopped pecans or walnuts (optional)
1-1/2 cups peeled and shredded apples

Preheat oven to 350°F.

In a medium bowl mix flour, sugar, baking powder, baking soda, salt, and allspice. Add butter, vanilla, and eggs one at a time. Fold in pecans or walnuts, apples,and cheese. Fill 2/3s full in greased muffin pans. Bake for 20-25 minutes or until toothpick comes out clean.

Tips:* I prefer to use Granny Smith apples because of their nice taste. The batter will be a bit thick. I also like to grab a 1/4 cup and use that to measure the batter - they are all the same size. The batter will be thick; sometimes I like to add a tablespoon of milk to the batter to help it out a bit. To make a healthier version, use wheat flour instead of all purpose flour. They are really good split in half with some butter.

Makes about 18 muffins.
