APPLE AND CHEDDAR CAKE 
3/4 yellow unbleached all purpose flour
1/2 cup yellow corn meal
1-1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup (1 stick) butter, softened
3/4 cup sugar
2 eggs
6 tablespoons Half and Half
1 cup extra sharp cheddar cheese, grated
1 large sweet apple (Gala), peeled, cored, cut into 1/4" pcs

Preheat oven to 350°F.

Grease a 9-inch round cake pan and dust with flour. Combine flour, corn meal, baking powder and salt in a medium bowl.

Combine butter and sugar in a large mixing bowl with an electric mixer and beat on medium-low; add eggs, one at a time, scraping down the side after each addition.

Turn the mixer to low and add add half of the flour mixture. Stir in the milk. Add in remaining flour mixture until just combined. Stir in cheese and apple.

Scrape the batter into the prepared pan and smooth top with a rubber spatula. Bake the cake until a tooth pick inserted in the middle comes out clean, about 35 minutes.

Let cool in the pan about 10 minutes, invert onto a wire rack to cool completely. Slice and serve.
