IRISH APPLE CAKE 
3 cups sifted all-purpose flour
3/4 cup sugar
1/2 tsp. salt
3 egg yolks
1 cup (2 sticks) butter
grated rind of 1 lemon
1 (15 oz.) can unsweetened applesauce
1/2 tsp. cinnamon
1/4 tsp. cloves

Preheat oven to 350°F. Grease a 9x9-inch square pan.

Mix flour, sugar, salt, egg yolks, butter and lemon rind. Divide mixture into two parts; press one part into bottom of greased pan.

Mix applesauce, cinnamon, cloves and spread on top of dough in pan. Sprinkle rest of dough over applesauce.

Bake at 350°F for 40 to 45 minutes.

Serve topped with whipped cream.

Makes 9 servings.
