DUTCH APPLE CAKE 
1 1/4 c. all-purpose flour, sifted
1 tsp. baking powder
1/2 tsp. salt
1 tsp. sugar
1/2 c. (1 stick) butter
1 egg yolk, beaten
2 tbsp. milk
4 or 5 apples

Mix flour, baking powder, salt and sugar. Cream butter, add the dry ingredients and mix. Combine beaten egg yolk and milk. Add to butter mixture and mix. Press mixture onto the bottom of a greased 8x8-inch cake pan. Press apples (peeled, cored and sliced) into the dough so they overlap. Sprinkle with the topping mixture (see below). Bake at 350°F for 50 minutes.

Serves 6.

Topping:

1/2 c. sugar
2 tbsp. flour
1/4 tsp. cinnamon
2 tbsp. butter

Mix sugar, flour and cinnamon. Cut in butter until coarse crumbs are formed.
