SMOTHERED PORK CHOPS | |
6 center cut chops, thick 1 tsp. salt 1/4 tsp. white pepper 1/4 c. pancake mix 2 tbsp. shortening 3 med. onion slices GRAVY: 1 tsp. salt 1/4 tsp. white pepper 1 tsp. sugar 1/4 c. flour 2 c. boiling water Combine pancake mix, salt and pepper. Coat chops and brown in shortening. Remove from skillet to shallow baking dish. Saute onions in same skillet adding salt, pepper and sugar for gravy. When lightly browned add flour, cooking until well blended. Slowly add water and cook until thickened. Pour over chops, cover tightly with foil and bake at 350 degrees for 1 hour 20 minutes. Serve as is or strain onions from gravy and mash with wooden spoon. |
