SOUR CREAM SCALLOPED POTATOES 
1/2 c. chopped onions
4 c. sliced cooked potatoes
2 tbsp. butter
1 c. dairy sour cream
2 tbsp. water
2 eggs, well beaten
1 tsp. salt
Dash of pepper
1 c. shredded sharp Cheddar cheese

Cook potatoes in salted water until done. Saute onion in butter. Combine with sour cream, water, eggs, salt, and pepper. Place potatoes in a buttered 1 quart casserole. Pour sour cream sauce over potatoes. Top with shredded Cheddar cheese. Bake in 350 degree oven 20 to 25 minutes.
