RICE PILAF 
1/4 c. butter
1 med. onion, diced
1 stalk celery, finely chopped
1 clove garlic, minced
1 carrot, finely chopped
1/2 green pepper, finely chopped
1 c. uncooked long grain rice
2 c. chicken broth
Salt & pepper to taste

Saute garlic, onion, carrot, pepper and celery in butter until onion is limp. Add rice and brown to golden, stirring often. Add chicken broth, cover and simmer until rice is tender. Stir occasionally. Add salt and pepper to taste, if desired. Serves 4 to 6.
