CHINESE FRIED PECANS 
2 quarts pecan halves
1 c. sugar
Peanut oil

Boil pecans one minute in 6 cups water. Drain and rinse with boiling water. Drain well. Mix and stir sugar and hot pecans until all sugar is dissolved. Heat oil in skillet and fry pecans until golden brown. Drain and cool on paper towels. Store in air tight containers. Sprinkle lightly with salt if desired. These make great gifts for friends or neighbors in a decorative tin.
