Bring 6 cups water to a boil. Put 2 cups pecans in the boiling water and boil 1 minute. Drain and rinse in cold water. Put in brown paper, sprinkle 1/4 cup sugar over pecans and shake well.
Have 1 inch oil in electric fry pan heated to 350 degrees. Put pecans in oil and fry for 5 minutes. Unplug pan at 4 1/2 minutes however. Remove pecans to brown paper bag, sprinkle with salt and shake well to remove the oil as much as possible. Tastes best when well cooled.
Sugar may be omitted but still shake in brown bag to remove excess water.
