PEACH UPSIDE DOWN CAKE 
TOPPING:

4 tbsp. butter
3/4 c. brown sugar
Almonds (blanched)
9 red cherries
9 canned peach halves

Melt butter in pan and blend in sugar. The amount of fruits and nuts may vary according to your taste. Stick an almond in the pierced end of each cherry. Arrange a stuffed cherry under each peach half, placing the peach with the cut side down. Put almonds in spaces between peaches.

BATTER:

2 eggs
2 egg yolks
1 c. sugar
1/4 c. peach juice
1 c. white flour
1 tsp. baking powder
1/4 tsp. salt
2 egg whites

Beat the 2 whole eggs and 2 yolks. Add the sugar gradually and beat well. Add peach juice slowly and beat. Sift flour, and measure. Sift flour, baking powder, and salt together. Fold into beaten eggs and sugar. Fold in stiffly beaten egg whites. Pour batter over fruit. Bake in moderate oven for about 50 minutes. Cool slightly and turn out.
