PEACH OR PINEAPPLE UPSIDE DOWN
CAKE
 
1/4 c. butter
2/3 c. sugar
1 egg, beaten well
1 c. milk
2 1/4 c. flour
4 tsp. baking powder
1/2 tsp. salt

Cream butter. Add sugar gradually. Add egg. Mix and sift flour, baking powder and salt. Add alternately with milk to first mixture. Bake in cake pan or in individual tins at 350 degrees until cake tests done. 3 tbsp. butter Canned or fresh peaches or canned pineapple Maraschino cherries (optional)

Cream butter. Add sugar. Spread evenly over bottom and sides of heavy fry pan. Top with fruit of your choice. Add maraschino cherries here and there. Pour in cake mix. Bake at 350 degrees until cake tests done. Serve fruit side up. Garnish with whipped cream, if desired.
