DAWN KENT'S PEACH UPSIDE DOWN
CAKE
 
2 eggs
1 c. sugar
1 tsp. vanilla
1 c. flour, sifted once
1 tsp. baking powder
Pinch salt
1/3 c. boiling water
1/4 c. butter
1 qt. or 1 lg. can peach halves
1/2-3/4 c. brown sugar

Melt butter in 10 inch skillet and sprinkle brown sugar over melted butter. Cover bottom of skillet with peaches, cut side down in brown sugar. Beat eggs until light. Add sugar gradually, continue beating. Add flavoring and flour sifted with baking powder and salt. Add boiling water. Pour over peaches in skillet.

Bake at 350 degrees for 40 minutes. Test for doneness with toothpick. Turn out on large platter to fit skillet. We like to serve it covered in milk, others like ice cream.
