PEACH UPSIDE DOWN CAKE 
5 tbsp. butter
1/3 c. packed brown sugar
1 (29 oz.) can sliced peaches
1 1/2 c. buttermilk biscuit mix
1/2 c. granulated sugar
1 egg
1/2 c. milk
1 tsp. vanilla extract
Whipped cream or ice cream (optional)

Put 2 tablespoons butter in 8-inch square pan and set in moderate 350 degree oven to melt. Sprinkle brown sugar evenly over melted butter. Drain peaches, reserving 1/4 cup syrup. Arrange peaches on brown sugar.

In bowl, mix next 2 ingredients. Add remaining softened butter, egg and reserved syrup. Beat well, then gradually stir in milk. Add vanilla and mix well. Pour over peaches and bake 50 minutes, or until center is done. Invert on large plate or platter and serve warm. 16 large or 9 small servings.
