GOURMET POTATOES 
6 lg. potatoes, boiled & diced
2 c. shredded cheddar cheese
1/4 c. butter
1 1/2 c. sour cream
1 tbsp. minced onion
Salt & pepper
2 tbsp. butter

In a saucepan, over low heat, melt cheese, 1/4 cup butter, stirring. Remove from heat, when mostly melted. Add sour cream, seasoning, and onions. Add diced potatoes. Turn into a greased 2 quart casserole. dot with the 2 tablespoons butter. Bake at 325 to 350 degrees for 25 minutes.
