ROMA MEAT LOAF | |
1 1/2 lb. lean ground beef 1 egg 3/4 c. cracker crumbs 1/2 c. finely chopped onions 2 (8 oz.) cans tomato sauce with cheese 1 tsp. salt 1/2 tsp. oregano 1/8 tsp. pepper 2 c. shredded Mozzarella cheese Combine ground beef, egg, cracker crumbs, onion, 1/3 cup tomato sauce with cheese, salt, oregano, and pepper. Mix well and pat half the mixture into a glass loaf pan. Sprinkle Mozzarella cheese evenly over meat mixture. Spread remaining meat mixture over cheese. Bake at 350 degrees for 1 hour. Drain off excess fat. Pour on remaining tomato sauce with cheese and bake an additional 15 minutes. Makes 4-6 servings. |
