SPINACH LASAGNA | |
1 lb. Ricotta or sm. curd cottage cheese 1 1/2 c. Mozzarella cheese, shredded 1 egg 1 pkg. chopped spinach, thawed and drained 1 tsp. salt 1 tsp. oregano 1/4 tsp. pepper 2 jars (15 1/2 oz. each) spaghetti sauce 8 oz. lasagna noodles 1 c. water Grease a 13x9 pan. Layer 1/2 cup of the sauce in the bottom, then, 1/3 of the UNCOOKED noodles. In the meantime, mix together Ricotta cheese, egg, spinach, salt, oregano and pepper. Put a layer of the cheese mixture next and sprinkle with 1/2 cup of the shredded Mozzarella cheese. Repeat. Top with remaining noodles, then, with remaining sauce. Finally sprinkle with the remaining Mozzarella cheese. Pour 1 cup of water carefully around the edge. Cover tight. Bake at 350 F. for 1 hour and 15 minutes. Let stand 15 minutes before serving. |
