BELLOTTI'S PESTO SAUCE 
2 full bulbs garlic
1 c. frozen peas, thawed & drained
1 c. Parmesan cheese
3 bunches fresh sweet basil, about 1 c. chopped
3 c. olive oil
1 tsp. lemon pepper
1/4 c. chopped parsley

Put olive oil into blender or food processor, add garlic and puree. Add parsley, lemon pepper and peas. Blend until a smooth texture is obtained for 1 minute. Add basil and blend again. Add cheese slowly as this will not only thicken sauce but add flavor and salt to sauce. Salt and pepper to taste. Serve on any type of pasta. Make sure you toss the pasta with the sauce before serving. Makes 5 cups sauce.
