DOUBLE BROILED FISH 
A delicious dish that looks light as a butterfly. Double broiled fish is low in calories yet it's so elegant looking you will want to serve it to special dinner guests.

2 to 3 lbs. fish fillets
Salt and pepper
3/4 c. yogurt
2 egg whites
1/4 c. grated hard cheese
Dash cayenne pepper

Use any small fish fillets. Season with salt and pepper, arrange on flat buttered pan. Broil until done but do not turn, beat 2 egg whites until stiff. Combine yogurt, cheese, cayenne pepper, fold the yogurt cheese mixture into the beaten egg whites and pile it on the fish fillets, cook under broiler until brown and fluffy or puffy. Serve immediately. Serves 8 people.
