CARAMEL PIE 
3 c. sugar
2 tbsp. flour or cornstarch
Dash of salt
6 eggs
1/2 stick butter
2 c. milk
1 tsp. vanilla

Mix 2 cups sugar, flour, salt, egg yolks, and milk in food processor or real good with mixer. Pour in saucepan and cook over meidum heat until thick. Set aside. Caramelize 1 cup sugar in large heavy black skillet, stirring constantly. Turn off heat. Add cooked mixture to caramelized sugar stirring quickly. Pour in 2 cooked pie shells. Beat egg whites until stiff. Cook in oven at 350 degrees until golden brown.
