ZUCCHINI BREAD | |
2 c. unpeeled zucchini 3 eggs 1 c. oil 1 c. sugar 2 tsp. vanilla 1 (4 oz.) can pineapple (crushed and drained) 3 c. flour 3 tsp. baking soda 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 3/4 tsp. salt 1 1/4 tsp. baking powder 1 c. dates 1 c. chopped nuts Cream eggs, oil and sugar. Stir remaining ingredients, mix well. Bake in 2 greased loaf pans 9x5 at 350 degrees for 1 hour. Test with toothpick. |
