BONNIE'S LEMON BARS 
1 egg
1/3 c. butter
1 pkg. lemon cake mix
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. grated lemon peel
1/4 c. lemon juice
Confectioners' sugar (optional)

Heat oven to 350 degrees. Mix 1 egg, butter, and cake mix until crumbly. I sometimes add a little more flour here if mixture seems too moist. Reserve 1 cup mixture. Pat remaining mixture in oblong (9 x 13 inch) ungreased pan. Bake 12 to 15 minutes. Beat 2 eggs, granulated sugar, baking powder, salt, lemon peel, and lemon juice until light and foamy. Pour over hot crust; sprinkle with reserved mixture. Bake 15 minutes or until done. Sprinkle with confectioners' sugar, if desired. Cool and cut into squares.
