PINEAPPLE ICE BOX PUDDING | |
2 pkgs. lemon Jello 1 lg. #2 can crushed pineapple, reserve juice 1 lb. pkg. vanilla wafers, crushed 1 pt. whipping cream 1 c. chopped nuts (opt.) Dissolve Jello in 3 1/2 cups hot water including the juice from the pineapple. Let congeal. Beat until fluffy. Fold in pineapple, nuts and whipped cream. Put 1/2 of wafer crumbs in large loaf pan, pour in Jello mixture. Top with rest of crumbs. Congeal overnight. Cut in squares and serve. |
