A GOOD WHITE BREAD 
2 c. milk
1/4 lb. butter
1/4 c. honey
1 tbsp. salt
1 envelope yeast
3 well beaten eggs
7 to 10 c. flour, unbleached

Scald the milk with butter, honey, and salt. Cool until tepid.

Mix in 2 cups unbleached flour, 1 envelope yeast dissolved in 1/4 cup water, and 3 well beaten eggs.

Let this sponge rise until doubled. Punch down and mix in 5 to 8 more cups flour, as is necessary to make a stiff dough. Knead for about 10 minutes or until smooth and elastic.

Cover and let rise until double.

Bake in medium oven (350 degrees). Bake for 40 minutes or until the loaves sound hollow and are nicely brown.
