GOOD BASIC DOUGH
1 pkg. active dry yeast
1/4 c. warm water
1 c. milk, scalded, you want to let this cool before adding
1/4 c. sugar
1/4 c. shortening
1 tsp. salt (I use a little more salt)
3 1/2 c. all-purpose flour
1 egg

Soak yeast in warm water for few minutes. Add milk, sugar, shortening and salt to yeast. Add 1 1/2 cups of flour. Beat well. Add egg and beat well. Gradually add flour to form soft dough. Put rest of flour on dough board and knead it in until it is smooth and pliable.

Place it in a large greased bowl and turn over so top will be greased. Cover with wax paper and set where it is warm, not hot, until it doubles in size. Knead it down once. Then next time it raises. Make it into rolls or cinnamon rolls. It is a small batch. You can double or triple the measurements, everything but the sugar. If I triple it, I just use 2 packages of yeast.
