CRUNCHY MUSSEL SALAD | |
18 New Zealand green mussels, marinated or smoked 4 sticks celery, chopped finely 2-3 tbsp. mayonnaise or vinaigrette 2 green onions, chopped finely 1 red apple, cored and diced Combine chopped celery, chopped green onions, diced apple, mayonnaise or vinaigrette and mussel meat. Allow to chill for 1/2 hour. Serve as entree for 6 or lunch for 3. |
