PEACH MARMALADE 
1/2 orange, seeded
1 lemon, halved and seeded
6 tbsp. water
1/8 tsp. baking soda
1 1/2 c. diced peaches
3 3/4 c. sugar
1/2 c. liquid pectin

Put the skin of the orange half and 1 lemon half (you want a peel about 1/8 inch thick) through a food mill, using the fine blade. Add the water and baking soda and simmer for 10 minutes in a covered pan. Squeeze the juice from the orange half and both halves of the lemon. Add the pulp and juice to the cooked rind and simmer, covered, for 20 minutes longer.

Combine in a kettle the peaches and the simmered fruit. Add the sugar and bring to a boil, stirring constantly. Boil for 5 minutes. Stir in the liquid pectin. Skim and stir for 5 minutes. Pour and seal.
