POPPY-SEED CHICKEN CASSEROLE 
Minute rice
3 lbs. chicken breasts
1 (16 oz.) carton sour cream
1 can cream of chicken soup
1 1/2 c. crushed Ritz crackers (one pack)
1 stick butter
2 tbsp. poppy seeds

Boil chicken 15 to 20 minutes or until thoroughly cooked. Cut chicken into bite-size pieces. Mix chicken, sour cream and soup together. Spread thinly in greased casserole dish.

In separate dish mix together: crushed crackers, melted butter and poppy seeds. Sprinkle this mixture on top. Bake at 325°F for 30 to 40 minutes. Serve over rice. Delicious!!

My niece made this for us once, and I have been making it ever since. This recipe is what we call a "keeper" in my family. It would fall in the category of a comfort food. It is delicious, yummy, mmmm-mmmm good, and it will make you look like a fabulous cook if you make this dish. Oh, and did I say I love this dish? Obviously, I LOVE this dish! :D

My daughter made this for me...It is delish...I make it quite frequently...however, I add a teaspoon of lemon juice to the chicken soup for an added flavor...try it!! It makes it so much better....

I layer the chicken & crackers, careful to top with cracker mix. This recipe is just too simple and just too good. I serve over chicken flavored ramen noodles. Cooked & drained. Did I mention how good this recipe is? Oldbuck
