HOMESPUN MEAT PIE 
1 lb. ground beef
1 egg
1/4 c. dry bread crumbs
Dash of pepper
3 tbsp. milk
1 tbsp. chopped fresh parsley
1 (4 oz.) can mushrooms, drained
1/3 c. chopped onion
1 tsp. salt
2 c. chopped, cooked potatoes
1/2 lb. Velveeta, cubed
1/4 tsp. salt

Combine meat, mushrooms, egg, onion, bread crumbs and seasonings and mix lightly. Press meat mixture onto bottom and sides of 9-inch pie plate. Bake at 400 degrees for 15 minutes. Remove shell from oven. Reduce oven temperature to 350 degrees and drain fat from meat shell. Mash hot potatoes with milk. Stir in Velveeta, parsley and salt. Fill hot meat shell with potato mixture. Return to oven and continue baking 10 minutes. 6 servings.
