1/2 c. chopped onion 1/2 c. chopped celery 1/4 c. vegetable oil 1/3 c. flour 2 c. chicken broth 1 c. tomato juice 1 tsp. salt 1 tsp. curry powder 1 tsp. Worcestershire sauce 4 c. cubed chicken (or left over turkey) Lightly brown onion and celery in oil. Blend in flour. Add chicken broth and stir until thickened. Add tomato juice and seasonings. Add cubed chicken and simmer until heated through. (This freezes beautifully.) Serve over rice. Serves 6. |
