MAMAW'S BANANA WALNUT CAKE 
1 cup shortening
1 1/2 cups sugar
4 eggs
2 1/2 cups all-purpose flour, sifted
1 tsp. baking soda
1/2 cup buttermilk
1 cup mashed bananas (about 2 1/2 to 3 bananas)
1/2 cup chopped walnuts

Preheat oven to 350°F

Cream shortening and sugar. Add in eggs, one at a time. Sift together flour and baking soda. Add 1 cup of flour, then add buttermilk. Now add rest of flour. Add mashed bananas and walnuts. Pour into greased and lightly floured 13x9-inch pan or two 9-inch layer pans.

Bake at 350°F for 25 minutes, then watch 5 or 10 minutes more. Let cool at least 10 minutes.
