BAKED EGGPLANT 
2 eggplants, peeled, boiled, sliced
4 crackers, crumbled
1 egg, beaten
Pepper
Salt
1/4 c. onion, chopped
Grated cheese

Peel, cut and boil eggplant in salt water until tender. Fold in other remaining ingredients. Cover with grated cheese. Cook 20 minutes at 350 degrees.
