PUMPKIN ROLLS 
3 eggs
2/3 c. canned pumpkin
1 c. sugar
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour
Powdered sugar

FILLING:

2 tbsp. butter, softened
8 oz. cream cheese, softened
3/4 tsp. vanilla
1 c. powdered sugar

Grease a waxed paper lined 10x15 inch cookie sheet. Thoroughly mix eggs, pumpkin, sugar, soda, cinnamon and flour. Spread on cookie sheet. Chill a few minutes. Completely cover a cotton tea towel (not terry) with powdered sugar. Flip dough onto towel. Remove waxed paper and roll up jelly roll fashion. Let stand rolled while you make filling, at least 5 minutes.

Thoroughly mix all filling ingredients. Unroll dough and spread filling completely over it. Re-roll, wrap in waxed paper or plastic wrap and chill. When ready to bake, heat oven to 375 degrees. Slice roll into 1/2 to 3/4 inch slices. Place on lightly greased cookie sheet(s) and bake approximately 15 minutes.
