HARVEST RICE MEDLEY 
2 c. cooked brown rice
1 tbsp. olive oil
1 med. onion, chopped
1/2 c. mushrooms, sliced
2 stalks broccoli, chopped
15 snow pea pods
1/2 c. cooked kidney beans
2 tsp. dried basil
2 tsp. fresh ground pepper
1/3 c. grated Parmesan cheese
3/4 c. plain low fat yogurt

Cook brown rice and set aside. Heat oil in large skillet and add all vegetables and seasonings. Saute until tender. Add cooked rice and toss with Parmesan cheese and yogurt. Serves 4.
