UPSIDE - DOWN HAM LOAF 
2 eggs, beaten
3/4 c. milk
2 tbsp. grated onion
1/2 tsp. dry mustard
Dash of cayenne pepper
1 c. soft bread crumbs
4 c. ground, cooked ham (1 1/2 lbs.)
2 tbsp. melted butter
1/3 c. firmly packed light or dark brown sugar
3 slices canned pineapple, cut in quarters

Combine eggs, milk, onion, mustard, cayenne pepper, and bread crumbs. Add ham; mix well. Melt butter in 9 x 5 x 3 inch loaf pan. Sprinkle sugar over butter. Arrange pineapple on top of sugar. Press ham mixture into pan. Bake in hot oven (375 degrees) for 45 minutes. Turn ham loaf out upside down on hot platter. Serves 6.
