SHRIMP WITH RICE AND VEGETABLES 
2 tbsp. oil
1 c. chopped mushrooms
2 med. onions, chopped
1 green pepper, chopped
1 sliced med. zucchini
1/2 bunch broccoli
1 lg. yam
1 can cocktail shrimp
1/4 c. almonds
Brown rice

In frying pan, add to warmed oil, onion, yam, mushrooms. Add juice from can of shrimp. Add rest of ingredients except almonds and rice.

Before adding almonds to frying pan, blanch them by pouring boiling water over them, let them drain. Add shrimp last. Serve over brown rice.
