APPLE PECAN BREAD 
2 c. sugar
4 c. diced, pared apples
1 c. coarsely chopped apples
3 c. flour
2 tsp. baking soda
1/4 tsp. allspice
1/4 tsp. nutmeg
3/4 tsp. cinnamon
1/2 tsp. salt
1 c. melted butter
2 tsp. vanilla
2 lg. eggs

Stir together apples, nuts and sugar. Let stand until juicy. (About 1 hour). Stir together flour, salt, soda and spices. Add to apple mixture and stir well. Stir in butter, vanilla and eggs.

Pour into 2 greased 1 pound coffee cans. Bake at 325 degrees for 1 hour and 15 minutes. Cool 10 minutes and turn out on a wire rack to cool.
