TWICE BAKED POTATOES | |
Baking potatoes 1 tbsp. skim milk for each potato 1 tsp. butter for each potato Salt or salt substitute and pepper Bake as many potatoes as needed at 400 degrees for 1 hour. Cool until potatoes can be handled. Cut a slice from top of each and scoop out potato, leaving a shell of about 1/8 - 1/4 inch thick. Mash potatoes. For each potato, use the amounts of ingredients specified above. Brush tops with small amount of melted butter; sprinkle with grated low-fat cheese and paprika. Reheat in 450 degree oven about 15-20 minutes. At this time, refrigerate if desired or wrap and freeze. To reheat after freezing, heat in oven at 450 degrees for about 30 minutes. |
