SALMON LOAF 
1 tall can salmon
1 tsp. salt
2/3 c. bread crumbs
1/2 tsp. pepper
2 tbsp. melted butter
3 eggs
1 tsp. prepared mustard
1-2 tbsp. dried parsley

Save salmon liquid, remove skin and bones. Break salmon in small pieces. Mix all ingredients and shape into a loaf. Place in shallow baking dish (13 x 9 inch pan). Bake at 350 degrees for 25 minutes or until well browned. Serve with Salmon Sauce (below).

SALMON SAUCE:

2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
Dash pepper
1 c. liquid (reserved salmon liquid & milk to make 1 cup)
2 tbsp. catsup

In saucepan over medium heat, melt butter. Stir in flour, salt and pepper. Add liquid gradually. Add catsup. Stir until smooth, thickened and heated through.
