VEGETABLE MARINADE 
1 c. oil (half can be olive oil)
3 c. apple cider vinegar
1/2 c. sugar
3 cloves garlic, minced
1 tbsp. salt
1 tbsp. mustard
Pepper to taste

Mix all ingredients and use as marinade for assorted sliced vegetables. Marinate at least 12 hours in refrigerator.

Suggested vegetables: Thin sticks of carrots, celery, zucchini, cucumbers, red and green peppers or chunky tomatoes. For a special occasion, marinate hearts of palm or artichoke hearts. Will hold for several days.
