LEMON ICE BOX COOKIES 
1 1/2 sticks unsalted butter, softened (do not substitute)
1 c. sugar
1 tsp. vanilla
1 1/2 tsp. lemon rind
1/4 c. lemon juice
1 1/2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
Confectioners' sugar

Cream butter and sugar. Add vanilla, lemon rind and juice. Beat until smooth. Sift flour, baking powder, and salt and blend well with creamed mixture.

On waxed paper, form logs 1 1/2 inch in diameter using paper as a guide. Chill log wrapped in wax paper for 2 hours. Cut log into 1/8 inch slices with sharp knife and bake 2 inches apart on ungreased cookie sheet in preheated 350 degree oven for 8-10 minutes or until edges start turning golden. Cool only a bit and then transfer to racks and sift with confectioners' sugar. These must be cooked on parchment paper. It comes in rolls like wax paper at cook shops.
