PUMPKIN SPICE COOKIES WITH LEMON
ICING
 
1/2 c. shortening
2 eggs, beaten
1 c. Libby's pumpkin pack
2 1/2 tsp. cinnamon
1 tsp. salt
1 c. nuts, chopped
1 c. sugar
2 tsp. baking powder
2 c. flour, sifted
1/2 tsp. nutmeg
1/4 tsp. ginger

Preheat oven to 350 degrees. Cream shortening and sugar. Add eggs and pumpkin, mix well. Sift flour, baking powder, salt and spices together. Add to pumpkin mixture and mix. Add nuts. Drop onto greased cookie sheet. Bake for about 15 minutes. Yield: 4 dozen.

LEMON ICING:

2 c. confectioners sugar
1 tbsp. lemon juice
1 tbsp. grated lemon rind
Cream or milk (just enough to make it spreadable)

Combine confectioners sugar with lemon juice and lemon rind. Add just enough cream or milk to make it spreadable.
