ENGLISH MUFFIN BREAD 
1 tbsp. or 1 pkg. dry yeast
1 tbsp. sugar
1/2 c. warm water
2 1/2 c. flour
2 tsp. salt
7/8 c. warm milk
1/4 tsp. baking soda dissolved in 1 tbsp. water

Combine yeast, sugar, water. Mix flour and salt. Warm milk in saucepan or microwave; add milk to flour mixture. Add all to yeast mixture. (If soft ball of dough does not form, add a bit more flour.) Cover with plastic wrap. Let rise until doubled, about 1 1/2 hours, in warm place.

Add soda mixture, stir down in bowl. "Dump" very sticky dough into greased loaf pan. Let rise 1 hour in pan, uncovered. Bake at 375 degrees until golden, about 25 to 30 minutes. Yield: 1 loaf.

Since microwave ovens vary in power, you may need to adjust your cooking time.
