LEFTOVERS BEST BREAD | |
1/2 c. cornmeal 1/2 c. brown sugar 1 tbsp. salt 2 c. boiling water 1/4 c. oil 2 pkg. active dry yeast 1/2 c. warm water 3/4 c. wheat germ or whole wheat flour 1/2 c. oatmeal or rye flour 3 to 5 c. unbleached white flour Combine cornmeal, brown sugar and salt. Stir into boiling water. Stir in the oil and leave set to cool to lukewarm. Soften yeast in warm water and stir into cornmeal mix. Add remaining flours and/or germ. Mix well. Stir in enough white flour to make moderately stiff dough, knead 6 to 8 minutes. Cover and let rise in a grease bowl until double. Punch down and divide in half. Place in 2 loaf pans and let rise in a warm place. Bake at 375 degrees about 45 minutes, until done. |
