SIMS CITRUS-GLAZED CHICKEN | |
1 c. fresh orange juice 2 tbsp. fresh lemon juice 2 tbsp. fresh lime juice 1/4 c. honey 1/2 tsp. dry mustard 1/2 tsp. paprika 1 tbsp. cornstarch 1/2 orange, sliced 1/2 lemon, sliced 1/2 lime, sliced Dash of cayenne pepper 3-4 lb. whole broiler-fryer chicken Combine orange juice, lemon juice, lime juice, honey, mustard, paprika, cayenne pepper and cornstarch in small saucepan. Heat until boiling, stirring constantly. Reduce heat and cook until glaze thickens. Fold wings of chicken across back with tips touching. Stuff chicken cavity with orange, lemon and lime slices. Place chicken breast side up on a rack in shallow roasting pan. Roast uncovered in 375 degree oven until thickest parts are done, 1 3/4 to 2 1/4 hours. Brush with glaze the last 30 minutes of cooking time. Serve with remaining glaze. |
