VANILLA CRISP COOKIES 
1 1/3 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening, half butter
1 c. sugar
2 eggs, beaten
1 1/2 tsp. vanilla

Mix flour, baking powder and salt, set aside in bowl. Cream butter and shortening and blend in sugar well. Add eggs and beat until fluffy. Stir in vanilla. Add dry ingredients into creamed mixture and mix well. Drop by teaspoonfuls onto a flour dusted baking sheet. Bake in a moderately hot oven (400 degrees) for about 8 minutes or until brown. Yield: 5 dozen cookies.

This recipe originally came from Meta Given's cookbook - Vanilla Crisps. I've been using this recipe since the early 60's before I was a teenager . . . cooking with my mother. It is not crunchy - it is soft almost cake like - perfect for small children - and adults alike enjoy.
