EUROPEAN STYLE CARROTS 
2 tbsp. butter
1 med. onion, finely chopped
2 tbsp. flour
1-2 tbsp. parsley
8 med. carrots, coarsely grated
Salt and pepper to taste
1/3 c. water

Melt butter in saucepan. Add onion and cook until transparent. Stir in flour and parsley. Add grated carrots. Mix well. Add salt, pepper, and water. Simmer covered until carrots are cooked.
