SALAD NICAISE 
DRESSING:

1 clove garlic, crushed
1/4 tsp. sugar
1 tsp. olive oil
1/8 tsp. salt and pepper
1 tbsp. red wine vinegar

Combine all ingredients and mix well.

SALAD:

2 c. torn lettuce leaves
1/4 c. drained water packed tuna
1 sm. potato, steamed and sliced
2 slices tomato
1 boiled egg, chopped or sliced
3 radishes, sliced in chunks
1/3 c. sliced steamed green beans

Put lettuce on plate - arrange remaining ingredients over lettuce. Just before serving, pour dressing on salad. Yield: 1 serving = 1 bread, 2 meats, 1 vegetable, 1 fat - 268 calories.
