BANANA BREAD 
3 RIPE bananas, mashed
2 c. all purpose flour
1/4 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1/2 c. soft shortening
1 1/2 c. granulated sugar
2 unbeaten eggs
1 tsp. vanilla
1/4 c. buttermilk (or add enough lemon juice to milk to curdle)
Coarsely chopped pecans

Sift flour, baking powder, soda and salt together. In a large bowl mix shortening, sugar, eggs and vanilla. Beat 1 1/2 minutes. Add buttermilk. Add sifted flour mixture alternately with mashed bananas. After blended beat 2 minutes.

For cup cakes bake at 350 degrees for about 30 minutes. For loaf bake at 325 degrees for about 1 hour. Sprinkle nuts on top before baking.
