WILD RICE CASSEROLE 
1/4 c. butter
1 c. wild rice
1/2 c. chopped onion
3/4 c. chopped celery
1/2 c. mushrooms
3 c. salt-free bouillon or chicken stock
1/2 tsp. poultry seasoning
Salt and pepper (optional)
Toasted slivered almonds
Leftover turkey, chicken, or hamburger (optional)

Brown rice, onion, and celery in the butter. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 45 minutes or until rice is cooked. Add meat. Stir. Sprinkle toasted almonds on top.

Domestic wild rice which is black must be soaked or boiled before it is added.
